Maida (all-purpose flour, plain flour)2½ cups
Butter200 g, cold
Brown sugar¾ cup
Egg1, plus a little for brushing
Salta pinch
Apple6 tart apples
Sugar¼ cup + 1 tbsp
Cinnamon powder1 tbsp
Raisins½ cup, soaked
Lemonjuice of 1/2
Breadcrumbsor crushed speculoos
Fresh cream (thickened cream, heavy cream)¾ cup + 2 tbsp, whipped, to serveMethod
- 1Rub the cold butter into the flour, brown sugar and salt. Add the egg and press into a dough. Chill 30 minutes.
- 2Peel and slice the apples. Toss with sugar, cinnamon, lemon juice and the soaked raisins.
- 3Press two thirds of the dough into a 24 cm springform tin and up the sides. Sprinkle the crumbs, then pile in the apples.
- 4Roll the remaining dough into strips, make a lattice on top and brush with beaten egg.
- 5Bake at 175°C for 60 to 70 minutes.
- 6Cool in the tin before releasing. Serve with whipped cream.
