Classic speculoos.

Ingredients

12 servings
Butter½ cup + 1 tbsp, soft
Brown sugar¾ cup dark brown sugar or cassonade
Cinnamon powder1 tbsp
Nutmeg¼ tsp
Whole spices½ tsp ground cloves
Dry ginger powder (ground ginger)1 tsp
Cardamom¼ tsp
Salta pinch
Maida (all-purpose flour, plain flour)2 cups
Baking soda (bicarb soda, bicarbonate of soda)½ tsp
Milk2 tbsp

Method

5 steps
  1. 1Cream the soft butter with the brown sugar and all the spices.
  2. 2Add flour, baking soda and milk and mix to a firm dough. Wrap and rest overnight in the fridge.
  3. 3Roll 3 mm thin between baking paper and cut shapes, or press into floured wooden moulds.
  4. 4Bake at 180°C for 12 to 15 minutes.
  5. 5Cool on a rack until crisp.
Serve it like this
