Maida (all-purpose flour, plain flour)1¼ cups
Water1½ cups, divided
Butter3 tbsp
Sugar⅓ cup, divided

Cooking oil (vegetable oil)for deep frying, about 4 tbsp absorbed
Jaggery3 tbsp, powdered
Cardamom½ tsp
Cinnamon powder½ tsp
Filter coffee powder2 tbsp filter coffee powder
Dark chocolate (bittersweet chocolate)100 g, chopped
Fresh cream (thickened cream, heavy cream)½ cupMethod
- 1Pour 100 ml boiling water over the coffee powder in a filter or fine strainer and let it drip for 10 minutes.
- 2Bring 250 ml water, the butter, 1 tbsp sugar and the salt to a boil on medium heat. Add the maida all at once and stir on low heat for 2 minutes.
- 3Cool 5 minutes, then beat in the egg until glossy.
- 4Heat the oil to 180°C on medium heat. Pipe 12 cm lengths through a large star nozzle and fry 4 minutes, turning, a few at a time.
- 5Mix the rest of the sugar with jaggery, cardamom and cinnamon. Roll the hot churros in it.
- 6Heat the cream until steaming, pour over the chocolate, wait 1 minute, stir in 4 tbsp decoction until smooth.
Serve it like thisStack churros in a crisscross on a plate, dusted with jaggery sugar. Pour the coffee chocolate into a steel tumbler on the side for dipping.
