Ingredients

4 servings
Moong sprouts (mung bean sprouts)2 cups moong sprouts, lightly steamed
Potato1 large, boiled and mashed
Roasted chana dal (roasted split chickpeas)⅓ cup, powdered
Paneer100 g, grated
Onion1 small, finely chopped
Green chilli1, chopped
Ginger1.5 cm, grated
Coriander leaves (cilantro)a handful
Chaat masala1 tsp
Cumin powder (ground cumin)½ tsp
Saltto taste
Cooking oil (vegetable oil)2 tbsp, for shallow frying

Method

4 steps
  1. 1Steam the sprouts for 5 minutes, cool and pulse coarsely.
  2. 2Mix with potato, powdered roasted chana, paneer, onion, chilli, ginger, coriander and spices.
  3. 3Shape into 10 flat tikkis, about 1 cm thick.
  4. 4Shallow fry on a tawa on medium heat, turning once, until crisp and brown.
Serve it like this

Serve hot with green chutney and tamarind chutney, a spoon of curd and sliced onion, or pack two in a tiffin.
