Ingredients

4 servings
Curd (plain yogurt, natural yoghurt)2 cups
Cucumber1 large, grated
Cumin seeds1 tsp, to roast and crush
Black salt½ tsp
Salta pinch
Mint leavesa few leaves, chopped
Green chilli½, finely chopped, optional
Red chilli powder (indian red chili powder)a pinch
Coriander leaves (cilantro)a little, chopped

Method

4 steps
  1. 1Dry roast the cumin seeds until dark and fragrant, then crush them.
  2. 2Grate the cucumber and squeeze out some of the water.
  3. 3Whisk the curd smooth, then mix in the cucumber, black salt, salt, mint, green chilli, coriander and most of the cumin.
  4. 4Chill for 10 minutes. Dust with chilli powder and the remaining cumin just before serving.
Serve it like this

Toss just before serving and bring it to the table cold, so it stays crisp.
