Ingredients

4 servings
Pearl couscous (giant couscous, israeli couscous)1½ cups
Olive oil3 tbsp, divided
Cucumber2, diced
Tomato2, diced
Onion½ red, finely diced
Flat leaf parsleyhandful, chopped
Mint leavessmall handful, chopped
Lemon juice3 tbsp
Chickpeas, boiled1 cup cooked
Saltto taste

Method

3 steps
  1. 1Toast the couscous in 1 tbsp olive oil until golden, then boil in salted water until tender.
  2. 2Drain, toss with a little oil and spread out to cool slightly.
  3. 3Toss with the vegetables, chickpeas, herbs, lemon juice, remaining oil and salt.
Serve it like this
