Ingredients

Pita bread4 large pitas
Brinjal (eggplant, aubergine)1 large, sliced into 1 cm rounds
Cooking oil (vegetable oil)for frying (amount absorbed)
Egg4, hard boiled
Potato2 small, boiled and sliced
Tahini¼ cup
Lemon juice1½ tbsp
Garlic1 small clove, grated
Waterabout 3 tbsp, cold
Tomato2, finely diced
Cucumber2 small, finely diced
Onion½ small, finely diced
Flat leaf parsleysmall handful, chopped
Raw mango (green mango)3 tbsp amba sauce (or tangy mango pickle)
Saltto taste

Method

4 steps
  1. 1Salt the aubergine slices for 10 minutes, pat dry and fry in hot oil until deep golden on both sides. Drain on paper.
  2. 2Whisk tahini with lemon juice, garlic, salt and cold water until smooth and pourable.
  3. 3Toss tomato, cucumber, onion and parsley with salt and a squeeze of lemon for a quick Israeli salad.
  4. 4Warm the pitas, open them and layer aubergine, sliced egg, potato and salad. Spoon over tahini and amba.
Serve it like this

Serve in warm pita stuffed to the brim, tahini and amba dripping, with extra salad and pickles on the side.
