Chickpeas, dry¾ cup, soaked overnight and boiled very soft
Sesame seeds¼ cup, toasted, for tahini
Olive oil3 tbsp, split
Garlic2 to 3 cloves
Lemon juice3 tbsp
Cumin powder (ground cumin)½ tsp
Water4 tbsp, ice cold
Kashmiri chilli powdera pinch, to garnish

- 1Pressure cook soaked chickpeas with a pinch of salt for 6 to 7 whistles until very soft.
- 2Grind toasted sesame with 1 tbsp oil into a smooth tahini paste.
- 3Blend chickpeas, tahini, garlic, lemon, cumin and salt, adding ice water a spoon at a time, until fluffy and smooth.
- 4Spread in a bowl, swirl, drizzle with remaining oil and dust with chilli.
Serve it like thisServe hot in a deep bowl with a swirl of ghee or a few coriander leaves on top, and rice or rotis on the side.
