Ingredients

4 servings
Basmati rice1¼ cups
Ghee1½ tbsp
Cumin seeds2 tsp
Bay leaf (indian bay leaf)1
Whole spices2 cloves, 1 cardamom, a small cinnamon stick
Coriander leaves (cilantro)to garnish
Saltto taste

Method

5 steps
  1. 1Rinse the basmati 3 or 4 times and soak for 20 minutes. Drain.
  2. 2Heat the ghee and add cumin, bay leaf and whole spices.
  3. 3Add the drained rice and stir gently for a minute.
  4. 4Pour in 2 1/2 cups hot water and the salt. Boil, then cover tightly and cook on the lowest heat.
  5. 5Rest 5 minutes off the heat, fluff with a fork and garnish with coriander.
Serve it like this

Fluff gently with a fork and serve hot on a wide plate, with raita or a side next to it.
