Ingredients

4 servings
Chicken, boneless400 g boneless thigh, thin strips
Chicken liver250 g, trimmed, halved
Onion3 medium, sliced
Cooking oil (vegetable oil)3 tbsp
Garlic3 cloves
Baharat2 tsp
Turmeric (ground turmeric)½ tsp
Cumin powder (ground cumin)½ tsp
Paprika½ tsp
Saltto taste
Black pepper½ tsp
Pita bread4 pitas
Tahini¼ cup
Lemon juice1½ tbsp
Waterabout 3 tbsp

Method

4 steps
  1. 1Toss the chicken and livers with the spices, salt and pepper.
  2. 2Heat a heavy pan or flat griddle until smoking. Fry the onions in half the oil until charred at the edges, then push aside.
  3. 3Add the rest of the oil, the chicken and garlic and sear, tossing, then add the livers.
  4. 4Whisk tahini with lemon, water and salt. Stuff the meat and onions into warm pitas and drizzle with tahini.
Serve it like this

Stuff into warm pitas with tahini, pickles and chopped salad, or pile on a plate with pita on the side.
