Ingredients

Butter1½ tbsp
Onion1, chopped
Garlic1 clove
Green peas3½ cups, frozen
Vegetable stock (vegetable broth)2¾ cups
Mint leavesa handful
Fresh cream (thickened cream, heavy cream)3 tbsp
Lemona squeeze
Salt1 tsp
Black pepper½ tsp

Method

3 steps
  1. 1Melt butter and soften onion and garlic for 5 minutes.
  2. 2Add peas and stock and simmer just 5 minutes.
  3. 3Add mint and blend until smooth. Stir in cream, lemon, salt and pepper.
Serve it like this

Serve in warm bowls with a swirl of cream, a few whole peas and torn mint on top. Hot or chilled, with crusty bread.
