Ingredients

8 servings
Maida (all-purpose flour, plain flour)2 cups
Instant dry yeast1½ tsp
Sugar1 tsp
Milk¾ cup, warm
Water¾ cup, warm
Salt¾ tsp
Baking soda (bicarb soda, bicarbonate of soda)½ tsp
Butterfor greasing rings and pan

Method

4 steps
  1. 1Whisk flour, yeast, sugar, milk and water into a smooth thick batter. Cover and leave 1 hour.
  2. 2Whisk in salt and baking soda dissolved in a spoon of water. Rest 10 minutes.
  3. 3Grease rings and a heavy pan on low heat. Fill rings halfway and cook 8 to 10 minutes.
  4. 4Remove rings, flip and cook 1 minute to colour the top.
Serve it like this

Toast lightly and serve warm, generously buttered so it seeps into the holes, with honey or jam on the side.
