Ingredients

8 servings
Maida (all-purpose flour, plain flour)1¼ cups
Butter90 g, cold
Cheddar cheese1¼ cups, finely grated
Parmesan⅓ cup, grated
Egg1 yolk plus 1 tbsp water
Kashmiri chilli powder½ tsp, for cayenne
Salta pinch

Method

4 steps
  1. 1Rub butter into flour, salt and chilli until like crumbs. Stir in both cheeses.
  2. 2Add yolk and water, press into a dough, chill 20 minutes.
  3. 3Roll to 5 mm, cut into strips 1 cm wide; twist if you like.
  4. 4Bake at 190 C for 12 to 14 minutes, cool on the tray.
Serve it like this

Stand straws in a tall glass or jar, or fan them on a board. Serve at room temperature.
