Ingredients

6 servings
Milk2 litres full cream milk
Sugar½ cup plus 2 tbsp
Cardamom½ tsp
Ghee1 tsp, to grease

Method

4 steps
  1. 1Bring the milk to a boil in a wide, heavy pan, then keep it on medium, stirring every few minutes and scraping down the sides.
  2. 2Keep reducing, stirring more often as it thickens, until it is about a fifth of the original volume.
  3. 3Add the sugar. It will loosen at first. Keep stirring on low until it thickens again and starts to leave the sides of the pan.
  4. 4Stir in the cardamom, turn off the heat and spread on a greased plate or let it cool slightly and shape into small rounds.
Serve it like this

Cut into squares or shape into small rounds and serve at room temperature.
