Ingredients

4 servings
Green chilli8 long bajji chillies
Besan (chickpea flour, gram flour)1 cup
Rice flour2 tbsp
Red chilli powder (indian red chili powder)1 tsp
Ajwain (carom seeds)½ tsp
Baking soda (bicarb soda, bicarbonate of soda)a pinch
Tamarinda small piece, as paste
Onion1 small, finely chopped
Lemon juice1 tbsp
Coriander leaves (cilantro)a handful
Cooking oil (vegetable oil)for frying
Saltto taste

Method

5 steps
  1. 1Slit the chillies lengthwise and scrape out seeds. Smear the inside with tamarind paste, ajwain and salt.
  2. 2Make a thick batter of besan, rice flour, chilli powder, ajwain, soda, salt and water.
  3. 3Heat the oil on medium. Test with a drop of batter.
  4. 4Dip, coat and fry a few at a time, turning once.
  5. 5Slit the bajjis again, stuff with onion, lemon and coriander, and serve hot.
Serve it like this

Drain on paper for a minute, pile onto a plate and serve hot with chutney on the side.
