Ingredients

Moong dal (split yellow mung beans)1 cup, soaked 4 hours
Baking soda (bicarb soda, bicarbonate of soda)a pinch, in the soak
Cooking oil (vegetable oil)for frying, about 3 tbsp absorbed
Saltfine, to taste
Black peppera pinch (optional)

Method

3 steps
  1. 1Drain soaked dal and dry on a cloth for 30 minutes.
  2. 2Fry small batches in hot oil until the sizzle stops.
  3. 3Drain and toss with fine salt while hot.
Serve it like this

Serve in small bowls, or sprinkle on chaat. Store airtight.
