Ingredients

Onion1 kg, finely chopped
Tomato1 kg, pureed
Cooking oil (vegetable oil)½ cup
Cumin seeds1½ tsp
Ginger garlic paste½ cup
Green chilli6, chopped
Turmeric (ground turmeric)1½ tsp
Kashmiri chilli powder2 tbsp
Coriander powder (ground coriander)3 tbsp
Garam masala1 tbsp
Salt3½ tsp

Method

  1. 1Heat the oil in a large heavy kadai, crackle the cumin and add all the onions. Cook on medium, stirring, until deep golden.
  2. 2Add the ginger garlic paste and chillies and cook until the raw smell goes.
  3. 3Add the tomato puree and powdered spices and cook, stirring often, until thick and the oil separates.
  4. 4Cool completely, portion into ice cube trays or bags of about 100 g, and freeze. Use straight from frozen for 2 servings of curry.
Serve it like this

Store as frozen cubes; to use, melt two cubes in a hot pan, add dal, paneer, vegetables or chicken, and finish with coriander.
