Ingredients

8 servings
Maida (all-purpose flour, plain flour)3¼ cups
Instant dry yeast2 tsp
Sugar2 tbsp
Salt1¼ tsp
Milk¾ cup plus, warm
Butter3 tbsp
Onion1, finely chopped
Green chilli3, finely chopped
Ginger1.5 cm, grated
Coriander leaves (cilantro)chopped
Curry leavesa sprig, chopped

Method

4 steps
  1. 1Knead flour, yeast, sugar, salt and milk for 8 minutes, then work in butter.
  2. 2Knead in onion, chilli, ginger, coriander and curry leaves. Rise 1 hour.
  3. 3Shape 8 buns, rise 40 minutes, brush with milk.
  4. 4Bake at 190 C for 18 minutes. Brush with butter.
Serve it like this

Serve warm, torn open, with filter coffee or chai. Tomato ketchup or green chutney on the side.
