Ingredients

4 servings
Cumin seeds2 tsp
Tamarinda small lemon sized ball
Mint leaves½ cup, packed
Coriander leaves (cilantro)a handful
Ginger1.5 cm
Black salt¾ tsp
Salta pinch or two
Dry mango powder1 tsp
Black pepper¼ tsp, crushed
Jaggery1 tbsp, grated
Lemon juice2 tbsp
Water4 cups, chilled

Method

5 steps
  1. 1Dry roast the cumin seeds on low heat until a shade darker, then crush to a powder.
  2. 2Soak the tamarind in 1/2 cup warm water for 10 minutes, squeeze out the pulp and strain.
  3. 3Blend the mint, coriander and ginger with a splash of water to a smooth paste.
  4. 4Mix the paste, tamarind, roasted cumin, black salt, salt, amchur, pepper, jaggery and lemon juice into the chilled water. Strain if you like it clear.
  5. 5Chill for 30 minutes and serve over ice.
Serve it like this
