Ingredients

6 servings
Potato1 kg starchy potatoes, grated
Onion1 large, grated
Egg2
Matzo meal⅓ cup (or flour)
Salt1½ tsp
Black pepperpinch
Cooking oil (vegetable oil)for shallow frying (amount absorbed)
Sour cream½ cup, to serve
Apple2, cooked into applesauce

Method

5 steps
  1. 1Grate the potatoes and onion together, then squeeze hard in a cloth to remove as much liquid as possible.
  2. 2Let the squeezed liquid settle, pour off the water and keep the starch at the bottom. Mix it back in with egg, matzo meal, salt and pepper.
  3. 3Heat a thin layer of oil and drop in spoonfuls, flattening them.
  4. 4Fry until deep golden on both sides. Drain on a rack.
  5. 5Serve hot with applesauce and sour cream.
