Ingredients

Palm sugar (gula melaka)½ cup
Water¾ cup
Pandan leaves2, knotted
Sweet potatocubed
Thin coconut milk2 cups
Ripe plantain (ripe nendran banana)4 ripe saba bananas, thick slices
Sabudana (tapioca pearls)small sago pearls, optional
Thick coconut milk¾ cup
Salta pinch

Method

4 steps
  1. 1Simmer the palm sugar, water and pandan until dissolved.
  2. 2Add the sweet potato and thin coconut milk and simmer 10 minutes.
  3. 3Add the bananas and sago and simmer 8 minutes.
  4. 4Stir in the thick coconut milk and salt and heat gently.
Serve it like this

Serve warm in small bowls, or chilled with ice. A pandan leaf on the side for colour.
