Ingredients

6 servings
Lamb (lamb or tender mutton)1 kg neck or shoulder, in chunks
Potato1 kg, half in thick slices, half chunks
Onion3, sliced
Carrot3, in chunks
Water4 cups lamb stock or water
Dried mixed herbs (italian seasoning)1 tsp thyme
Bay leaf (indian bay leaf)2
Flat leaf parsleya handful, chopped
Saltto taste
Black pepper1 tsp

Method

4 steps
  1. 1Layer lamb, onions, carrot and potato slices in a heavy pot, seasoning each layer.
  2. 2Add stock, thyme and bay. Bring to a simmer, skim and cover.
  3. 3Simmer very gently 1 1/2 hours. Add potato chunks and cook 45 minutes more.
  4. 4Season and scatter with parsley.
Serve it like this
