Ingredients

4 servings
Potato1 kg floury potatoes, peeled
Spring onion (green onion, scallion)a bunch, finely sliced
Milk1 cup
Butter4 tbsp, plus extra to serve
Saltto taste
White peppera pinch

Method

4 steps
  1. 1Boil the potatoes in salted water until very tender, then drain and steam dry for a minute.
  2. 2Meanwhile, simmer the spring onions in the milk for 5 minutes.
  3. 3Mash the potatoes, then beat in the hot milk and onions with half the butter. Season.
  4. 4Pile onto plates, make a well in each mound and drop in a knob of butter.
Serve it like this

Serve a mound on each warm plate with a well of melting butter, beside sausages, ham or fish.
