Ingredients

6 servings
Potato1 kg floury potatoes
Cabbage3 cups, shredded, or kale
Spring onion (green onion, scallion)4, sliced
Butter5 tbsp, plus extra
Milk¾ cup plus 2 tbsp
Saltto taste
Black peppera pinch

Method

4 steps
  1. 1Boil potatoes until tender; drain and steam dry.
  2. 2Cook cabbage in a little butter until tender. Warm spring onions in the milk.
  3. 3Mash potatoes with butter and the hot milk, then fold in cabbage.
  4. 4Make a well in the top and drop in a knob of butter.
Serve it like this

Mound in a warm bowl, make a crater on top and fill with melted butter. Serve next to stew or sausages.
