Classic barmbrack.

Ingredients

10 servings
Maida (all-purpose flour, plain flour)3½ cups
Instant dry yeast2 tsp
Milk1 cup + 2 tbsp, lukewarm
Butter4 tbsp
Sugar⅓ cup, plus 2 tbsp for glaze
Egg1
Allspice1½ tsp mixed spice
Salt¾ tsp
Raisinsraisins and sultanas
Candied peel (tutti frutti or candied orange peel)chopped

Method

5 steps
  1. 1Mix the flour, yeast, sugar, spice and salt. Add the warm milk, egg and melted butter and knead for 10 minutes.
  2. 2Cover and rise until doubled.
  3. 3Knead in the fruit and peel. For Halloween, push in a ring wrapped in baking paper.
  4. 4Shape into a greased round tin and rise 30 minutes.
  5. 5Bake at 190°C for 40 to 45 minutes, then brush with sugar dissolved in a little hot water.
Serve it like this

Slice thickly, toast if you like and spread with butter. Tea is mandatory.
