Classic Dublin coddle.

Ingredients

4 servings
Sausages (snags, bangers)6 to 8 pork sausages
Bacon (streaky rashers, streaky bacon)6 rashers back bacon
Potatothickly sliced
Onion3, sliced
Flat leaf parsleychopped
Chicken stock (chicken broth)2 cups
Black pepper½ tsp
Salta little
Whole wheat bread (wholemeal bread)brown soda bread, to serve

Method

4 steps
  1. 1Brown the sausages and bacon briefly if you like.
  2. 2Layer onions, potatoes, sausages and bacon in a heavy pot with parsley and pepper.
  3. 3Pour over the stock, cover tightly and cook on very low heat or at 160°C.
  4. 4Uncover for the last 15 minutes to brown the top.
Serve it like this

Ladle into deep bowls with plenty of broth and serve with buttered soda bread.
