Ingredients

6 servings
Maida (all-purpose flour, plain flour)4 cups
Baking powder2 tsp
Salt1 tsp
Water1⅓ cups
Ghee¼ cup, plus brushing
Cooking oil (vegetable oil)2 tbsp

Method

4 steps
  1. 1Knead maida, baking powder, salt and water into a soft dough. Rest 30 minutes.
  2. 2Roll each ball thin, brush with ghee, dust with flour, cut from centre to edge and roll into a cone. Push down and rest 20 minutes.
  3. 3Roll out thin and cook on a hot tawa, brushing with oil, turning often.
  4. 4While hot, clap between your hands or beat with spatulas until it shreds.
Serve it like this

Pile shredded roti in a cloth lined basket and serve with curry chicken, curry goat and channa.
