Ingredients

Okra (lady's finger)500 g
Onion1 large, sliced
Tomato1 large, chopped
Ginger garlic paste2 tsp
Green chilli1, slit
Cumin seeds1 tsp
Turmeric (ground turmeric)½ tsp
Red chilli powder (indian red chili powder)1 tsp
Coriander powder (ground coriander)2 tsp
Dry mango powder1 tsp
Garam masala½ tsp
Cooking oil (vegetable oil)3 tbsp
Saltto taste

Method

5 steps
  1. 1Wash the okra, then dry each pod completely on a towel. Trim and cut into 1 inch pieces.
  2. 2Fry the okra in most of the oil on medium high, uncovered, stirring now and then. Lift out.
  3. 3In the remaining oil, add cumin, then the onion. Cook until golden, then add ginger garlic paste and green chilli.
  4. 4Add the tomato, turmeric, chilli and coriander powder. Cook until thick.
  5. 5Return the okra, add salt, amchur and garam masala and toss for 2 minutes.
Serve it like this

Serve hot on a plate, with a few fresh coriander leaves on top.
