Ingredients

6 servings
Mutton (goat meat)1 kg goat on the bone
Curry powder3 tbsp
Allspice½ tsp
Dried thyme1 tsp
Scotch bonnet chilli (habanero or scotch bonnet pepper, habanero chilli)1, whole or chopped
Onion2, chopped
Garlic6 cloves
Ginger2.5 cm
Spring onion (green onion, scallion)3, chopped
Potato2, cubed
Cooking oil (vegetable oil)2 tbsp
Water3 cups
Saltto taste

Method

4 steps
  1. 1Rub goat with half the curry powder, allspice, thyme, garlic, ginger, onion, spring onion and salt. Marinate 4 hours or overnight.
  2. 2Heat oil and toast the remaining curry powder until it darkens slightly.
  3. 3Add goat and brown well. Add water and the pepper and pressure cook for 8 whistles. Let pressure release naturally.
  4. 4Add potatoes and simmer uncovered 20 minutes until thick.
Serve it like this

Serve in deep plates with rice and peas or white rice, fried plantain and a simple salad.
