Ingredients

Urad dal (split black gram)1 cup split black gram, soaked 6 hours
Ginger2.5 cm
Garlic2 cloves
Cumin powder (ground cumin)½ tsp
Timur (sichuan peppercorns)a pinch
Cooking oil (vegetable oil)for the griddle
Saltto taste

Method

4 steps
  1. 1Rub soaked lentils to remove most of the black skins, then grind with ginger and garlic to a thick, fluffy batter.
  2. 2Stir in cumin, timur and salt.
  3. 3Spoon onto an oiled griddle and spread into thick rounds. Make a dent in the centre.
  4. 4Cook, drizzling oil, until golden on both sides.
Serve it like this

Serve hot on a plate with choila or tomato achar on the side.
