Ingredients

4 servings
Chicken, boneless500 g boneless, grilled or tandoor charred
Mustard oil2 tbsp
Fenugreek seeds½ tsp
Timur (sichuan peppercorns)1 tsp, crushed
Dried red chilli3, whole
Red chilli powder (indian red chili powder)1½ tsp
Turmeric (ground turmeric)¼ tsp
Cumin powder (ground cumin)½ tsp
Garlic3 cloves, crushed
Ginger2.5 cm, crushed
Green chilli2, sliced
Spring onion (green onion, scallion)2, sliced
Lemon juice1½ tbsp
Saltto taste

Method

4 steps
  1. 1Grill the chicken over coals or a high flame until charred and cooked through. Cut into small cubes.
  2. 2Toss with garlic, ginger, chilli powder, cumin, timur, turmeric, lemon and salt.
  3. 3Heat mustard oil until smoking, fry fenugreek and dried chillies until dark, and pour over the chicken (jhaneko).
  4. 4Toss in green chilli and spring onion.
Serve it like this

Serve in a small bowl with beaten rice (chiura), bhatmas sadeko and a cold drink.
