Ingredients

4 servings
Fresh tuna500 g sashimi grade tuna, 2 cm cubes
Soy sauce3 tbsp
Sesame oil2 tsp
Onion½ sweet onion, thinly sliced
Spring onion (green onion, scallion)3, sliced
Sesame seeds1 tbsp, toasted
Dried red chillia pinch of flakes
Nori sheets½ sheet, snipped (or limu seaweed)
Cooked rice3 cups warm rice

Method

  1. 1Cut the tuna into even 2 cm cubes with a cold, sharp knife.
  2. 2Toss with onion, spring onion, sesame seeds and chilli.
  3. 3Add soy and sesame oil and fold gently.
  4. 4Chill for 10 to 30 minutes, not longer.
  5. 5Spoon over warm rice and scatter with nori.
Serve it like this

Pack warm rice into a bowl, spoon poke on top with its juices and add a little nori. Eat soon while the fish is cold.
