Ingredients

4 servings
Beef700 g stewing beef, cubed
Onion3 large, finely chopped
Cooking oil (vegetable oil)3 tbsp
Berbere spice blend2½ tbsp
Tomato3, grated
Tomato puree3 tbsp
Garlic5 cloves, minced
Ginger2.5 cm, minced
Cardamoma pinch
Water2 cups
Saltto taste

Method

5 steps
  1. 1Cook the onions in a dry pot on low until soft and brown, adding a splash of water if they stick.
  2. 2Add oil and berbere and fry until deep red.
  3. 3Add garlic, ginger, tomato and tomato puree and cook until thick.
  4. 4Add the beef and stir to coat. Add water, cover and simmer until tender.
  5. 5Stir in cardamom and salt and simmer uncovered to thicken.
Serve it like this

Ladle onto injera or into a bowl with crusty bread, a boiled egg halved on top if you like.
