Ingredients

Sweet potato glass noodles (glass noodles, cellophane noodles)100 g dry mung bean glass noodles
Minced pork (pork mince, ground pork)150 g
Prawns (shrimp)150 g, peeled
Shallots3, sliced
Onion¼, sliced
Celerya few stalks Chinese celery, chopped
Tomato1, in wedges
Coriander leaves (cilantro)a handful
Fresh red chillies (fresh red chiles)2 bird's eye, sliced
Garlic1 clove, minced
Fish sauce2 tbsp
Lemon juice3 tbsp lime juice
Sugar1 tbsp
Water2 tbsp
Peanuts3 tbsp, roasted

Method

4 steps
  1. 1Soak glass noodles in warm water 10 minutes, then boil 1 minute and drain. Cut into shorter lengths.
  2. 2Cook the pork in the water in a small pan, breaking it up, until no pink remains. Add prawns and cook until just pink.
  3. 3Mix fish sauce, lime, sugar, chilli and garlic.
  4. 4Toss noodles, pork, prawns and pan juices with dressing, shallots, onion, celery, tomato and coriander. Top with peanuts.
Serve it like this

Pile onto a plate with lettuce and coriander, peanuts on top, extra lime wedges alongside.
