Tapioca starch½ cup
Sugar⅓ cup
Water⅔ cup
Pandan leaves1 leaf, knotted
Thick coconut milk¾ cup

5 steps
  1. 1Toss the diced water chestnut in the beetroot juice and leave for 10 minutes.
  2. 2Drain, then toss in the tapioca starch until every cube is coated. Shake off the excess in a sieve. Sprinkle a few drops of water and toss again for a thicker coat.

  4. 4Boil the rubies in plenty of water in batches. When they float and turn glossy, cook 1 minute more.
