Ingredients

Pork trotters1.2 kg pork leg or hock, skin on
Palm sugar (gula melaka)4 tbsp
Garlic10 cloves
Coriander leaves (cilantro)roots and stems
White pepper1 tsp
Water2½ litres
Dark soy sauce3 tbsp
Soy sauce3 tbsp
Star anise4
Cinnamon1 stick
Chinese five spice powder1 tsp
Egg5, hard boiled and peeled
Cooked rice5 plates jasmine rice
Mustard greenspickled or blanched
Fresh red chillies (fresh red chiles)sliced
Vinegarfor chilli vinegar

Method

5 steps
  1. 1Boil the pork leg 5 minutes, drain and rinse.
  2. 2Melt the palm sugar in a heavy pot until dark amber. Add the pounded garlic, coriander roots and pepper.
  3. 3Roll the pork in the caramel, then add the water, soys and spices. Simmer covered 2 1/2 hours.
  4. 4Add the eggs for the last 30 minutes.
  5. 5Slice the pork and serve over rice with braising sauce, a halved egg, mustard greens and chilli vinegar.
Serve it like this

Fan slices over a mound of jasmine rice with a spoon of sauce, half an egg and pickled greens. Chilli vinegar and raw garlic on the side.
