Ingredients

2 servings
Raw papaya (green papaya)1 small green papaya, peeled and shredded
Garlic2 cloves
Green chilli2 to 4 bird's eye chillies
Green beans4 long beans, in 4 cm pieces
Tomato6 cherry tomatoes, halved
Peanuts2 tbsp, roasted
Dried shrimp1 tbsp
Fish sauce1½ tbsp
Lemon juice2 tbsp lime juice
Jaggery1 tbsp palm sugar

Method

4 steps
  1. 1Shred the papaya into long thin strands and keep in iced water while you prep.
  2. 2In a mortar pound garlic and chillies, then the dried shrimp and half the peanuts, to a coarse paste.
  3. 3Add palm sugar, fish sauce and lime juice and pound until the sugar dissolves. Add beans and tomatoes and bruise lightly.
  4. 4Add the drained papaya and pound gently while turning with a spoon. Serve at once, topped with remaining peanuts.
Serve it like this

Heap onto a plate with cabbage wedges and long beans on the side to cool the heat. Serve cold with sticky rice and grilled chicken.
