Ingredients

Beef500 g sirloin or tender steak
Cooking oil (vegetable oil)1 tsp
Salta pinch
Fish sauce2 tbsp
Lemon juice3 tbsp lime juice
Jaggery2 tsp palm sugar
Fresh red chillies (fresh red chiles)2 to 3 bird's eye, sliced
Garlic1 clove, minced
Shallots4, thinly sliced
Lemongrass1 stalk, tender part, finely sliced
Cucumber1, sliced
Tomato1 cup cherry tomatoes, halved
Mint leavesa big handful
Coriander leaves (cilantro)a handful
Spring onion (green onion, scallion)2, cut in lengths
Rice1 tbsp, toasted and ground
Lettucea few leaves

Method

4 steps
  1. 1Dry toast the rice in a pan until deep golden, then grind coarsely.
  2. 2Rub the beef with oil and salt and sear over very high heat to medium rare or as you like. Rest 10 minutes and slice thinly.
  3. 3Stir fish sauce, lime, palm sugar, chilli and garlic until the sugar dissolves.
  4. 4Toss warm beef with the dressing, shallots, lemongrass, cucumber, tomato and herbs. Sprinkle rice powder and serve on lettuce.
Serve it like this

Lay lettuce on a plate and pile the beef salad on top, herbs scattered over, sticky rice alongside.
