Ingredients

Cooking oil (vegetable oil)2 tbsp absorbed, more for frying
Shallots2, sliced
Tomato1, in wedges
Celerya few leaves Chinese celery
Spring onion (green onion, scallion)1, sliced
Coriander leaves (cilantro)a handful
Fresh red chillies (fresh red chiles)2 bird's eye, sliced
Garlic1 clove, minced
Fish sauce1 tbsp
Lemon juice1½ tbsp lime juice
Sugar2 tsp

Method

4 steps
  1. 1Heat a generous layer of oil until shimmering. Crack in eggs one or two at a time and spoon hot oil over them.
  2. 2Fry until edges are deep golden and crisp. Drain and cut into wedges.
  3. 3Mix fish sauce, lime, sugar, chilli and garlic.
  4. 4Toss eggs gently with dressing, shallots, tomato and herbs.
Serve it like this
