Ingredients

4 servings
Sweet potato1 medium, matchsticks
Onion1, thinly sliced
Carrot1, matchsticks
Perilla leaves5 leaves, shredded (optional)
Maida (all-purpose flour, plain flour)1 cup
Cornflour (cornstarch)¼ cup
Salt½ tsp
Water¾ cup ice cold
Cooking oil (vegetable oil)for frying, about 80 g absorbed
Soy sauce1½ tbsp, for dipping
Vinegar2 tsp, for dipping

Method

4 steps
  1. 1Toss the vegetables with 2 tbsp of the flour.
  2. 2Whisk remaining flour, cornflour, salt and ice water briefly, leaving lumps.
  3. 3Fold in the vegetables and drop small tangles into oil at 175 C.
  4. 4Fry 3 to 4 minutes, turning, then drain on a rack. Fry again 1 minute for extra crunch.
Serve it like this

Serve hot on paper in a basket with soy vinegar dip, or next to a pan of tteokbokki for dunking.
