Ingredients

4 servings
Maida (all-purpose flour, plain flour)2½ cups
Waterfor dough and steaming
Salt1½ tsp
Cooking oil (vegetable oil)2 tbsp
Mutton (goat meat)400 g, in strips
Onion1, sliced
Carrot2, in strips
Cabbage¼ head, sliced
Capsicum (green capsicum, green bell pepper)1, in strips
Garlic3 cloves

Method

4 steps
  1. 1Make a firm dough with flour, a little salt and about 150 ml water. Roll thin, oil, steam 10 minutes or pan cook until set, then cut into strips.
  2. 2Fry the mutton in oil until browned, then onion, garlic, carrot and capsicum.
  3. 3Add the cabbage, salt and 150 ml water.
  4. 4Lay the noodles on top, cover tightly and steam 10 minutes. Toss together.
Serve it like this

Pile into bowls straight from the pan, with a sharp pickle or a spoon of chilli sauce on the side.
