Buuz, the dumpling of the Mongolian Lunar New Year.

Ingredients

5 servings
Maida (all-purpose flour, plain flour)3¼ cups
Waterabout 1 1/4 cups, for dough and filling
Salt2 tsp
Minced mutton (goat mince, ground goat)600 g with some fat
Onion2, finely chopped
Garlic4 cloves, minced
Black pepper1 tsp
Cumin powder (ground cumin)½ tsp, optional

Method

5 steps
  1. 1Make a firm dough with the flour, half the salt and about 200 ml water. Rest 20 minutes.
  2. 2Mix the mince with onion, garlic, pepper, cumin, remaining salt and about 100 ml cold water until sticky.
  3. 3Roll the dough into small rounds, thinner at the edges.
  4. 4Place filling in the centre and pleat the edges upward, leaving a small hole at the top.
  5. 5Steam on an oiled tray for 18 to 20 minutes until the filling is cooked through.
Serve it like this

Serve hot from the steamer on a big plate, with salty milk tea and pickled vegetables or ketchup on the side.
