Arepa flour2 cups arepa flour
Water1⅔ cups, warm
Cooking oil (vegetable oil)1½ tbsp
Chicken, boneless400 g boneless thighs
Hung curd (greek yogurt)¼ cup
Kashmiri chilli powder1¼ tsp
Garam masala¾ tsp
Ginger garlic paste1 tbsp
Kasuri methi (dried fenugreek leaves)½ tsp
Avocado1 large, ripe
Mayonnaise2½ tbsp
Coriander leaves (cilantro)a big handful
Green chilli1, finely chopped
Lemon juice4 tsp
Onion½ small red onion, finely chopped

Method

6 steps
  1. 1Mix the chicken with hung curd, chilli, garam masala, ginger garlic paste, kasuri methi and 1/2 tsp salt. Rest 15 minutes.
  2. 2Mix the arepa flour with 1 tsp salt and the warm water. Knead 2 minutes and rest 5 minutes. Shape 8 discs, 1.5 cm thick.
  3. 3Cook the arepas in a lightly oiled tawa on medium heat for 6 minutes a side, then bake in the oven at 180°C for 10 minutes.
  4. 4Meanwhile cook the chicken in the rest of the oil in a hot pan on high heat for 10 minutes, turning, until charred and no pink remains. Cool slightly and shred.
  5. 5Mash the avocado with mayonnaise, lemon juice, green chilli, onion, chopped coriander and salt. Fold in the chicken.
  6. 6Split each hot arepa three quarters of the way, like a pocket, and stuff generously.
Serve it like this

Stand two stuffed arepas on their sides on a board, filling facing out. Add a coriander sprig to each and a lime wedge between them.
