Ingredients

Beef1.2 kg rump cap or silverside
Waterabout 10 cups
Carrot2, in chunks
Celery2 stalks
Leek1
Onion1, halved and charred
Bay leaf (indian bay leaf)2
Black pepper1 tsp peppercorns
Saltto taste
Apple1 tart apple, finely grated
Horseradish2 tbsp freshly grated
Lemon juice2 tsp
White bread1 slice, crust off, soaked in milk
Egg yolk2 hard boiled yolks
Cooking oil (vegetable oil)¼ cup
Spring onion (green onion, scallion)a big bunch of chives

Method

5 steps
  1. 1Put the beef in simmering water with the charred onion. Skim the foam as it rises.
  2. 2Add vegetables, bay and peppercorns. Keep at the barest simmer until tender.
  3. 3Mix grated apple, horseradish and lemon for the Apfelkren.
  4. 4For chive sauce, mash bread and yolks, beat in oil drop by drop, season and fold in chives.
  5. 5Season the broth and slice the beef across the grain.
Serve it like this

Serve the beef slices in a copper pot or wide bowl with a little broth, vegetables around, and Apfelkren and chive sauce in small dishes.
