Maida (all-purpose flour, plain flour)⅔ cup
Milk¾ cup
Egg2
Salta pinch plus to taste
Butterfor the pan
Beef stock (beef broth)5 cups clear beef broth
Spring onion (green onion, scallion)chives, snipped
Nutmega pinch

Method

4 steps
  1. 1Whisk flour, milk, eggs, salt and half the chives into a thin batter. Rest 10 minutes.
  2. 2Fry very thin pancakes in a lightly buttered pan.
  3. 3Roll the pancakes and slice into thin strips.
  4. 4Heat the broth with nutmeg, season, place strips in bowls and pour over the hot broth. Add chives.
Serve it like this

Pile the ribbons in a warm soup plate, pour hot broth over at the table and finish with chives.
