Cooked rice2½ cups cooked rice
Dried white beans (haricot beans, navy beans)¾ cup dry canary beans, cooked
Onion2, 1 for aderezo, 1 for salsa
Garlic3 cloves
Ají amarillo paste2 tbsp
Cooking oil (vegetable oil)3 tbsp
Dried oreganoa pinch
Beef400 g thin steak
Egg4
Lemon1 lime
Coriander leaves (cilantro)a handful

- 1Fry one chopped onion, garlic and ají amarillo in 1 tbsp oil until soft.
- 2Add the mashed beans and rice and mash together. Season.
- 3Shape into an oval log in a hot oiled pan and fry, turning, until golden and crisp.
- 4Sear the steak and fry the eggs. Slice the remaining onion and toss with lime, coriander and salt.
- 5Serve tacu tacu with steak, egg and salsa criolla.
