Ingredients

6 servings
Potato6 medium, boiled and sliced
Ají amarillo paste3 tbsp
Queso fresco200 g, or paneer
Evaporated milk⅔ cup
White bread1 slice, or 4 cream crackers
Cooking oil (vegetable oil)2 tbsp
Garlic1 clove
Onion¼, sautéed
Saltto taste
Egg2, boiled
Black olives6
Lettuceleaves

Method

4 steps
  1. 1Sauté onion and garlic in a little oil until soft.
  2. 2Blend ají paste, cheese, evaporated milk, bread, sautéed onion and garlic, remaining oil and salt until very smooth.
  3. 3Lay lettuce on a plate, add potato slices and pour the sauce over.
  4. 4Garnish with egg halves and olives.
Serve it like this

Arrange potato slices on lettuce, cover with sauce and finish with egg halves and olives. Serve cold or at room temperature.
