Ingredients

6 servings
Pasta1 box jumbo pasta shells
Ricotta2 cups
Mozzarella2 cups, grated
Parmesan½ cup, grated
Egg1
Spinach150 g, wilted and squeezed
Flat leaf parsleya handful, chopped
Tomato2 tins crushed tomatoes
Garlic5 cloves, sliced
Olive oil2 tbsp
Basil leavesa handful
Nutmega pinch
Saltto taste
Black peppera pinch

Method

5 steps
  1. 1Make the marinara: sizzle garlic in oil, add tomatoes and basil and simmer 20 minutes. Season.
  2. 2Boil the shells 2 minutes less than the packet says. Drain and lay apart.
  3. 3Mix ricotta, half the mozzarella, half the parmesan, egg, spinach, parsley, nutmeg, salt and pepper.
  4. 4Spread sauce in a dish, fill each shell generously and nestle them in. Spoon over more sauce and top with remaining cheese.
  5. 5Cover with foil and bake at 190°C for 25 minutes, then uncover for 10 more.
Serve it like this

Bring the dish to the table bubbling, then serve three shells per plate with sauce spooned over and basil on top.
