Ingredients

4 servings
Butter3 tbsp beef dripping or butter
Onion2 large, sliced
Potato1 kg, thickly sliced
Beef stock (beef broth)1¼ cups
Beef300 g leftover roast beef, chopped
Saltto taste
Black pepper½ tsp
Beetroot (beet)pickled, to serve

Method

5 steps
  1. 1Melt the dripping in a heavy pot and soften the onions.
  2. 2Add the thick potato slices and turn to coat.
  3. 3Pour in the stock, cover and cook on low for 35 to 40 minutes, shaking the pot now and then.
  4. 4Fold in the chopped beef and heat through.
  5. 5Season well and serve with oatcakes and pickled beetroot.
Serve it like this
