Ingredients

Maida (all-purpose flour, plain flour)2 cups
Breadcrumbs1 cup
Beef suetshredded
Brown sugar½ cup
Rolled oats (porridge oats)½ cup
Raisinssultanas and currants
Golden syrup (golden syrup or light corn syrup)2 tbsp
Molasses (black treacle)2 tbsp black treacle
Cinnamon powder2 tsp
Dry ginger powder (ground ginger)1½ tsp
Allspice1 tsp mixed spice
Baking soda (bicarb soda, bicarbonate of soda)1 tsp
Milk1 cup
Egg1
Salta pinch

Method

5 steps
  1. 1Mix the flour, breadcrumbs, suet, sugar, oats, fruit, spices, baking soda and salt. Stir in the syrup, treacle, milk and egg.
  2. 2Scald a large cotton cloth in boiling water, wring it out, lay it flat and dust heavily with flour.
  3. 3Spoon the mixture into the centre, gather the cloth and tie tightly with string, leaving room for it to swell.
  4. 4Set on a saucer in a large pot of simmering water, half submerged, and cook for 3 to 4 hours, topping up with boiling water.
  5. 5Unwrap carefully and dry the skin in a 180°C oven for 15 minutes.
Serve it like this

Slice thickly and serve warm with custard, or fried in butter for breakfast.
